Mayo Parmesan Chicken and Rice

Ingredients

1 cup mayo

4 cloves garlic

1 tablespoon rosemary

1 teaspoon salt

1 pinch pepper

4 Boneless chicken breast halves boneless skinless (or 6 thighs)

1 cup rice medium grain

1 cup water

3/4 cup Parmesan cheese grated


Directions

Preheat oven to 350. Whisk mayo, garlic, salt and pepper and rosemary in a bowl. spread over each chicken piece. Spread rice in bottom of a 9x13 pan. Pour water over. Place chicken pieces on top. Sprinkle parmesan cheese over top. Bake until chicken no longer pink and juices run clear and center registers 165 degrees- 35-45 minutes. 703.4 calories, 21.5 g protein, 42.3 g carbs, 1154.2 mg sodium
