1 lb. Ground Beef
1 Medium Onion
1/2 cup Milk
1 Egg beaten
8 Soda Crackers crushed
Salt and Pepper to taste
1 tbsp Ketchup (optional)
1/4 cup Ketchup
1/4 cup Water
1 tsp Dry Mustard
1/2 cup Brown Sugar
This has been my go-to basic meatloaf recipe for years, but I forgot to review it. I use 1/4 cup of seasoned bread crumbs instead of soda crackers, and 1/3 cup milk (I use half-n-half, mmmm) instead of 1/2 cup. Sometimes I omit the onions. Make sure to chop the onions into smaller pieces, because large onion pieces will make the meatloaf fall apart. I bake it on a foil-covered (but sliced a little )rack in a glass dish, not in a loaf pan or flat on a pan or dish. Form it well. Add some breadcrumbs or crushed crackers if it doesn't hold together, but not too much, or it won't taste like meatloaf, and it'll be too dry. Finally, instead of the sweet ketchup-mustard glaze, I use Sweet Baby Ray's BBQ Sauce. My family really liked BBQ sauce glaze over ketchup-mustard glaze.
8thFloorLovevery easy to prepare and good flavor for a basic meatloaf.
