White fish in olive rosee sauce

Ingredients

1 1/2 pound White fish fillet sustainable species

1/2 cup green olives diced

6 Italian Tomtoes diced pealed, seeds removed

1/2 cup cream 35% or less

1 cup low salt chicken broth

2/3 cup dry white wine

2 Finely chopped onions

3 Garlic cloves pressed

3 sprigs fresh thyme

black pepper

1 tbs Parmesan

Fresh chives chopped


Directions

1- cook onions in olive oil for a 3-4 minutes 2- Add garlic cook for 2-3 minutes 3- Add white whine and simmer until quite reduced 4- Add tomatoes and thyme sprigs and cook 5- Add chicken broth and simmer for a few minutes 6- Add green olives 7- Poach white fish for 2 minutes, then add cream 8 - Cook at low heat until the fish is ready 9 - Add parmesan (If you feel the sauce should be thicker, don't hesitate to remove fish, cook the sauce more and put it back when the sauce is at desired thickness) Serve with (or on top of) rice, with greens. Green been salad is a good side. Sprinkle chopped chives on top. Enjoy

Great flavors for fish that was recently caught by a friend of ours. Served with Jasmine rice for the delicious sauce. Also used fresh herbs from my garden.
