Mediterranean Orzo Salad

Ingredients

2 cup Uncooked orzo

2 cup Baby spinach chopped

1/2 cup Sun-dried tomatoes chopped

3 tablespoon Red onion diced

3 tablespoon Kalamata olives pitted and chopped

1/2 teaspoon Black Pepper freshly ground

1/4 teaspoon Salt

6 ounce Marinated artichoke hearts chopped

3/4 cup Feta cheese crumbled


Directions

1. Cook the orzo according to package directions, omitting salt and fat. 2. Drain the orzo and rinse with cold water. 3. Combine the orzo with the rest of the ingredients in a large bowl. 4. Add as much of the marinade from the artichoke hearts container and sun-dried tomatoes as desired.

This was wonderful and fresh tasting! The only thing I did different is that I used halved grape tomatoes instead of sun dried. This is a great dish to take to party or Pot Luck supper.
