Mesclun Salad

Ingredients

1/2 c Alfalfa sprouts

10 Cherry tomatoes; (yellow or

1 sm Cucumber; sliced

2 md Carrots; shredded

; halved

1 sm Red onion; slivered

6 c Mesclun greens; rinsed

Balsamic vinegar; or your

Salad dressing


Directions

Place greens in center of large salad bowl; arrange vegetables around edge. Just before serving, drizzle vinegar or dressing over top of greens and vegetables. Serve with crusty French bread. Makes 4 servings. 1 gram of fat per 1 cup serving. | Recipe by: August 1996 Vegetarian Times
