Mexican Chicken

Chicken breasts baked in a delicious Mexican sauce. Delicious and very easy to prepare.

Ingredients

6 Boneless, skinless chicken breasts

1 20 oz. jar salsa any kind you like

1 Red bell pepper diced

2 tbsp. cumin

2 tbsp. lemon juice

2 tbsp chili powder

3 cloves garlic crushed

1 can black beans rinsed and drained

2 cups chedder/jack cheese shredded


Directions

Preheat oven to 375. Place chicken breasts in 9 x 13 baking dish or large cassarole. In a bowl, mix salsa with red bell peppers, chili powder, cumin, garlic, and lemon juice. Pour over chicken. Pour black beans over the salsa and then top with cheese. Cover with foil and bake for 1 1/2 hours. Serve with rice.
