Mexican Corn Fritters

Ingredients

3/4 cup flour

1/2 tsp baking powder

1 tsp chili powder

1/4 tsp salt + pepper

1/2 cup milk

11/4 cups corn (2 ears)

6 ounces cotja cheese crumble

2 gr onions chpd


Directions

In bowl combine flour, baking powder, chili powder, salt, pepper and milk Stir in onion, corn and cheese (Should be consistency of pancake batter. If too thick, add 1 tblsp milk) Heat oil over medium-high heat. When oil hot, drop batter tablespoon size into oil, rolling and turning until golden brown. Remove and drain on paper towel. Continue until all batter fried. Keep warm until ready to serve.
