Mexican Shrimp Cocktail (Coctel de Camarones)

This is my favorite dish at a Mexican restaurant. I love that it can fill you up without a lot of calories!! Perfect on a hot day with a Corona and lime.

Ingredients

1 pound large shrimp boiled, peeled, deveined, tails off

16 oz pico de gallo fresh

1 cup ketchup

1/4 cup lime juice preferably freshly squeezed

1 Avocado peeled and sliced


Directions

Mix all ingredients together except avocado. Store in fridge until ready to serve. Add avocado just before serving. Serve in bowls or margarita glasses with hot sauce and crackers on the side.

This is an incredible recipe! I would recommend this not only as an appetizer but it's a hardy main course as well– feel free to put in oysters and clams as well.
