Mexicorn Salad

Ingredients

3 ears corn

1/2 each red and green bell peppers diced

1 tomato diced

1/8 cup red onion diced

1 teaspoon Lime Juice

1 tablespoon cilantro chopped

1/4 teaspoon each ground cumin, salt, pepper


Directions

Drop corn in boiling water for 5 minutes. Drain, cool and cut off the cob. Mix corn with red and green pepper, tomato, onion, lime juice, cilantro, cumin salt and pepper.
