Preheat oven to 375 degrees.
In a bowl, whisk eggs, cream and salt and pepper. Add fillings (see below), then divide the mixture evenly between silicone baking cups or the wells of a greased muffin tin. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.

Steamed broccoli flowerets, shredded cheddar cheese, and cooked brown rice
Thawed shredded hash browns, diced ham, shredded swiss cheese
Diced cooked potatoes, grated parmesan or cheddar cheese
Peas, diced ham, goat-cheese crumbles
Cooked crumbled bacon, corn kernels, sauteed onion and spinach
