Minty Brownies

Any of you a fan of Girl Scout Thin Mints out there? These minty brownies may remind you of them.

Ingredients

8 ounce Cream cheese softened to room temperature

1/4 cup Granulated sugar

1 large Egg lightly beaten

1 1/2 teaspoon Peppermint extract

4 ounces Unsweetened chocolate coarsely chopped

2/3 cup Unsalted butter

2 cups Granulated sugar

4 large Eggs lightly beaten

1 teaspoon Pure vanilla exrtact

1 1/4 cups Unbleached, all-purpose flour

1 teaspoon Baking Powder

1 teaspoon Salt


Directions

Heat oven to 350 deg F. Lightly grease and flour a 13 x 9" baking pan, being sure to tap out any excess flour and discard. For the Minty Filling: Beat the cream cheese and sugar in a small bowl using an electric mixer until light, fluffy and smooth. Add egg and mint, mixing well. Set aside. For the Brownie Base: Melt chocolate and butter in a medium saucepan over low heat, stirring to blend. Remove saucepan from heat. Whisk in sugar, eggs and vanilla. Stir in flour, baking powder and salt. Spread into prepared pan. Carefully spoon Minty Filling atop Brownie Base. To marble, gently cut through in a zigzag or swirl pattern with a knife. Bake for 35 minutes or until a cake tester or toothpick inserted near the center comes out with a few moist crumbs attached. Cool pan completely on a wire rack before cutting.
