Mirin glazed salmon

Salmon fillet glazed in sticky Mirin maranade served with rice and spring onion

Ingredients

2 salmon fillets

4 spring onion sliced lengthways

60 ml mirin

60 Ml Soy sauce

50 G Light brown sugar

150 G Rice


Directions

Marinate salmon in Mirin, Soy sauce and Sugar for 30minutes. Cook rice as per directions. Put salmon in hot non stick pan skin side down for 3 minutes. Turn over and finish for 2mins Remove from pan, add marinade to pan, allow to bubble up then pour over salmon, top with spring onion and serve with rice.

Little heavy on the soy sauce for my taste. I went with 30 instead of 60. Otherwise very lovely!
