While tweaking another recipe to boost the flavour and remove the nuts, I created this delicious cookie. Crispy, chewy, chocolatey, with just the right hit of butterscotch.

12 oz chocolate chips (not milk chocolate) - you could u
2 tbsp butter
2 tbsp instant coffee granules
3/4 c all purpose flour
1 tsp baking powder
1/2 tsp salt
3 Eggs
1 c white sugar
1/4 c dark brown sugar
2 tsp vanilla extract
1 c butterscotch chips
Didn't melt chocolate correctly so whole recipe failed but i can.tel.it wouldve tasted nice :-)

Pumpkin77It should read (after the chocolate chips in the ingredients) - "You could use good quality chocolate instead." We can't use high end chocolate because we have yet to find any safe for our son. He has a nut allergy. So I create these recipes using what we have available to us. [I posted this recipe.]
