Mole Chicken

Ingredients

1 tablespoon Extra virgin olive oil

1 pound Chicken breast skinless, boneless, cut into 4 pieces

1/2 Onion thinly sliced

4 cloves Garlic finely chopped

1 can (14 oz) Tomato crushed

1/2 cup Chicken broth low-sodium

1 tablespoon Cocoa powder unsweetened

2 teaspoons Honey

2 teaspoons Apple cider vinegar

1/2 teaspoon Cinnamon ground

1/2 teaspoon Chipotle chili powder

Salt & pepper to taste


Directions

In a large skillet, heat oil over medium heat. Add chicken and cook 2 minutes per side, until golden brown. Remove to a plate. Add onions and garlic and cook 3 to 4 min, stirring frequently, until onion is tender. Add tomatoes, chicken broth, cocoa powder, honey, vinegar, and cinnamon, and chili powder. Bring to a boil. Return chicken to the skillet. Season with salt and pepper and reduce heat to a simmer. Cover and cook about 15 min. Uncover and cook 3 to 5 min more, stirring occasionally, until chickenis completely cooked through and sauce is lightly thickened. Transfer chicken and its sauce to plates and serve.
