700 g rib-eye steak

1.2 litres water or bone broth

2 medium onions diced

6 garlic cloves diced

5 cm piece of fresh root ginger thinly sliced, leave skin on if organic

20 cherry tomatoes halved

3 tbsp tamarind paste (to taste depending on strength)

A big pinch of black or white pepper

3-4 tbsp fish sauce (or to taste)

400 g green beans tops trimmed

2 whole fresh red chillies

400 g pak choi leaves and stalks roughly chopped or othe

400 g spinach or other greens
