Noodles with Creamy Creole Mustard Sauce

This simple noodle dish is reminiscent of stroganoff. The Creole mustard gives it that unique Louisiana touch. (Creole mustard has a high concentration of mustard seeds, thus it has more flavor and a grainy texture. Another grainy, or stone-ground, mustard may be substituted.)

Ingredients

16 ounces noodles

1 tablespoon olive oil

CREAMY CREOLE MUSTARD SAUCE:

1/4 cup mayonnaise

1 teaspoon Creole mustard

1 teaspoon fresh lemon juice

1/2 teaspoon salt

1/4 teaspoon white pepper


Directions

Bring a pot of water to a boil. Cook the noodles according to package directions. When done, lift noodles out of the pot, or drain the noodles, then transfer to a large bowl, drizzle with olive oil and toss to coat. Combine ingredients for sauce. Tip: When noodles are done, lift out with a mesh strainer that has a handle.
