Oatmeal Chocolate Chip Coconut Chewy Cookies

Ingredients

1 cup butter softened

1 1/4 cup packed brown sugar

1/2 cup white sugar

2 Eggs

2 tablespoons milk

2 teaspoons vanilla extract

1 3/4 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

3 cups rolled oats

2 cups semisweet chocolate chips

1 cup chopped walnuts or pecans

1 cup shredded coconut


Directions

1/ Preheat oven to 375(F). 2/ In a large bowl, cream together butter, brown sugar and white sugar till smooth. 3/ Beat in eggs, one at a time. 4/ Stir in milk and vanilla. 5/ Combine flour, baking soda and salt in a separate bowl, stir into sugar mixture. 6/ Stir in the oats and choc. chips, nuts and coconut until well mixed. 7/ Drop by rounded tablespoon onto ungreased cookie sheet. 8/ Bake 10-12 minutes for chewy cookies or 14 minutes for firmer ones.

My husband eat half the batch the same night I made these! I didn't have the coconut or nuts so I just used the chocolate chips & I used rice flour to make them gluten free & they were amazing!

Added some cinnamon and used 1/4 cup of margarine 3/4 cup of butter to make them a bit chewy.
