Ingredients

1 cup All purpose flour

1 Egg

1 envelope Dashi powder

1/2 teaspoon Baking Powder

Salt to taste

3/4 cup Water as required

2 cup Napa Cabbage

4 slices Bacon

2 Green Onion

Okonomiyaki Sauce

Mayonnaise

Bonito Shaving

Directions

First cut up the Cabbage and the Green onion and put aside. Regular cabbage can be used just make sure to chop it very fine. In a medium bowl mix Flour, Dashi, Baking Powder, Salt. Add the egg and mx thuroughly. Add the water a little at a time. You want the batter to be smooth but not watery. Its ok if all the water isnt used. Next add the Napa Cabbage and green onion. At this point any extra ingrediants can be added. You can use, shrimp, octopus, sqiud, beef, chicken, pork or any other vegetable you like. Once everything is mixed together set aside. Cut the bacon slices in half. This will give you 8 pieces. Cook the bacon a minute or 2 to start. At this point you can either use the oil from the bacon, which gives it even more flavor, or you can go a healthier route and remove the bacon drain out all the bacon oil and use a couple table spoons of canola oil. If using the bacon oil just remove 4 pieces of bacon from the pan. If using canola oil put 4 slices of bacon back into the pan. Arrange the bacon in the middle of the pan. Pour the batter into the pan over the bacon. Once the batter is smoothed over the bacon, place the remaining bacon on top of the batter. At this point turn the heat to medium. Let the batter firm up. If you like you can cover or leave it open. When half way done about 5-6 minutes flip the who thing over onto other side. Let this side get done another 5-6 minutes. Take of the heat and place on plate. At this point you can add the topping. Traditional toppings include okonomiyaki sauce, mayonnaise and bonito shaving sprinkled on top. Then Cut and enjoy. P.S This recipe can be divided into 4 servings to make smaller individual sized servings.

Never had Okonomiyaki before, so I don't know how authentic it is, but it is really easy and really tasty.
