Okra, Tomatoes, And Corn

Ingredients

2 lg Tomatoes; chopped

salt and pepper to taste

1 c Corn kernels

2 tb Butter

1 lb Okra; cut in 1" slices

1 sm Green bell pepper; finely

1/2 ts Oregano; crumbled

1 sm Onion finely chopped


Directions

Melt the butter in a pan; add the onion and green bell pepper, and cook over medium heat for 3 to 4 minutes, stirring often. Add the okra slices and cook, stirring often, for 2 minutes. Add the tomatoes, corn, and oregano. Cover and simmer over low heat for 10 minutes. Season with salt and pepper to taste. Serve hot. Recipe by: The Fannie Farmer Cookbook
