Base Method
Place Oreo's into a food processor and blend till no large bits remain. Place in a bowl - (place a large handful aside to place in cheesecake mixture later). Melt butter and add to cookie mixture.
Mix till butter is well combined with cookie mixture and pour into a cheesecake tin. Press mixture into tin till the bottom is covered and level.
Place in fridge till required again.
Filling Method
In a mixer, cream together butter and sugar for approximately 2 minutes.
Add cream cheese and vanilla and continue creaming for approximately 10 minutes.
While creaming, set up a double boiler and slowly melt chocolate.
When completely melted, add into cream cheese mixture and mix until incorporated.
Whip up cream separately and fold into mixture with a wooden spoon. (Keeps the cheesecake lighter)
Mix till the cheesecake mixture is smooth.
Add remaining cookie crumble (optional but i like it) mix in and pour into cheesecake tin on top of base prepared earlier.
Place in the fridge for at least 2 hours or until set. (Overnight is better)
