Combine breadcrumbs, Parmesan cheese, garlic powder, paprika, and pepper in a shallow dish; set aside.
Cut zucchini lenghtwise into 4 pieces; cut each piece in half cross-wise. Place zucchini in zip-top bag; add oil & water. Shake.
Dredge zucchini in crumbs. Mix and place on baking sheet coated with spray.
Bake @ 475 degrees for 10 minutes or until brown & tender (usually takes longer than 10 minutes.)
