Oysters on the Half Shell with Fennel-Corriander Mignonette

Ingredients

12 ds Hot pepper sauce

1 ts Toasted and coarsely-ground

1/2 c Rice wine vinegar

12 Oysters; (Belons or

1/2 c Finely-diced fennel

Plate of crushed ice or rock

1/4 c Shallots minced

Directions

In a small bowl, mix fennel, shallots, coriander and vinegar. Spoon on top of oysters. Put one dash of hot pepper sauce on each oyster. Place on plate of ice and fennel sprigs and serve immediately.
