Pam's Banana Bread

Modified from "Hawaiian Banana Bread" in Food Editors' Favorites cookbook. A very yummy banana bread.

Ingredients

2 cups sugar

1 cup butter

6 bananas over ripe, mashed

4 eggs well beaten

2 1/2 cups flour

1 teaspoon salt

2 teaspoons baking soda


Directions

Cream butter and margarine together. Add bananas and eggs. Whisk together flour, baking soda and salt (sift if desired) and blend into banana mixture. Avoid overmixing. Turn batter into two greased bread pans (9x5x3"). Bake at 350 degrees for about an hour or until toothpick tests dry when poked into the center of a loaf (test first at 50 minutes).
