Panzanella with Pesto

Ingredients

4-5 Heirloom Tomatoes 1 Inch Chunks

6 Cups Old World style bread Cubed

1/2 Small Red onion Sliced

1/4 Cup Extra virgin olive oil

4 Tablespoons White Balsamic vinegar

6 Leaves Fresh basil Chopped

2 Tablespoons Pesto sauce

1/2 teaspoon Sea salt Or to taste

Fresh ground pepper To taste

Garlic powder To taste


Directions

Preheat oven to 450*F. Spray baking sheet with Olive oil. Place bread cubes on baking sheet loosely. Spray with olive oil spray and season with garlic powder,sea salt and pepper to taste Bake 5-10 minutes in hot oven until toasted. Then cool. Meanwhile place tomatoes,onion and chopped basil in large bowl. Add bread cubes and toss. Stir oil,vinegar,pesto and salt and pepper together in small measuring pitcher and drizzle over salad, tossing well to evenly distribute dressing.
