Papaya-Habanero Hot Sauce with Passion

Ingredients

1 Garlic

1 sm Yellow onion

2 Habaneros or scotch bonnets,

Mustard and curry, see notes

1 Ripe papaya, halved and

1 Piece fresh gingerroot

1 c White distilled vinegar


Directions

Spoon out the papaya flesh, combine with the remaining ingredients in food processor, and puree. Pour the sauce into a nonreactive saucepan and heat until just boiling. Extremely hot! I used 2 extra large habaneros without seeds and veins. I skipped the onions and used shallots instead. Delicious sauce for experienced hot-heads. Use gloves or cover your hands with a ziplock to Hanley the peppers. And keep Out of childrns reach. to
