Pasta E Fagiole

My modified version of a recipe found on another website.

Ingredients

2 Tbsp olive oil

1 Tbsp Garlic chopped

2 Cups Onions chopped

2 cups carrots sliced

1 cup Celery sliced

1 cup red bell pepper chopped

1/4 cup basil chopped

2 tsp oregano dried

1/2 tsp Red pepper flakes

28 oz plum tomatoes

4 tsp Chicken bouillon

3 cups Water boiling

10 oz chicken bouillon

14 oz red beans

14 oz white beans

1-1/2 cups pasta small shells or ditalini

Salt & pepper to taste


Directions

Heat oil in a Dutch oven. Add garlic and veggies and cook until onions are translucent. Stir in spices, tomatoes with liquid, chicken bouillon dissolved in boiling water, and chicken bouillon. Bring to a boil, then reduce heat and simmer for 15-20min. Add beans and pasta and cook approx 15min until pasta is al dente.
