Ingredients

4 tbsp Olive oil

1 1/2 cups Onions Chopped

1 cup Carrots Sliced in half moon pieces

1/2 cup Celery chopped

12 cups Low-sodium chicken stock

4 cups Cannellini beans Drained and rinsed

1 cup Roasted red pepper Diced

1/2 cup Garlic Minced

Salt and pepper to taste

5 cups Cooked chicken 1 whole rotisserie works well

4 cups Red tomatoes Roughly chopped

1/4 cup Fresh parsley Minced

3 cups Fusilli .. Or your favorite pasta

1 cup Fresh grated parmesan cheese

2 tbsp Fresh oregano minced

6 Leaves Fresh basil Rolled and sliced


Directions

1. In a soup pot, heat the olive oil over medium heat until hot 2. Add: -onions -carrots -celery .. searing the veggies until the carrots have browned, 2-3 minutes. 3. Reduce the heat to medium low, then add: -stock -beans -red pepper -garlic -salt and pepper Simmer until the veggies and beans soften. 4. Add: -chicken -tomatoes -parsley Allow the soup to cook until the tomatoes have softened. Finally, reduce the heat to low and add: -pasta -cheese -oregano -basil Cook 20-30 more minutes, or until pasta is done to your liking.

Oh my goodness!! This was so good! Even my teen that doesn't like soups said, "It isn't bad...for a soup." which is considered high praise in my household from him. Half of my family of vegan so I used vegetable broth instead of chicken and added 2 extra cups of beans for more protein. However, this is one GIANT pot of soup! Pretty sure we'll be eating it for days and I'll then I'll have to throw some out. Next time I think I will take 1/2 out prior to adding the pasta and freeze that then only add 1/2 the required pasta.
