200 g butter room temperature
110 g acacia honey
3 eggs, room temperature
1/2 coffee cup of mead
200 g spelt flour
10 g baking powder
2 ripe peaches peeled and diced
4 ripe peaches peeled and cut in a half or wedges
20 g butter
4 tablespoons sugar
Seeds of 1/2 vanilla bean
1 tablespoon mead
a few tablespoons sliced almonds
Very tasty, moist and delicious. Now I know Mead is not one of those drinks that is readily available this day and age, and if you do not want to go through the hassle of brewing it yourself, or paying an arm and a leg to someone who does you can do this simple fake. Simply take a bottle of Resling and add honey, dried fruit, and orange juice and let soak for a week or so. You will get a better flavor if you use a strong honey, dried apples, raisins, and peaches work real well, but I used whatever I had on hand. The dried fruit that I soaked in the wine is what I used in the cake Follow the steps for baking the cake and make sure to have extra Mead on hand to drink with your cake.
