Ingredients

1 1/2 cups old-fashioned rolled oats

1 1/2 tsp ground cinnamon

1 tsp Baking powder

1/2 tsp Kosher Salt

2 each ripe bananas

3/4 cup Milk

1/3 cup creamy peanut butter

5 Tbsp Maple Syrup or honey

1 each large egg

1 1/2 tsp Vanilla extract

1 cup frozen blueberries

Directions

1. Preheat the oven to 350^F. Fit a piece of parchment paper into a 8-inch-square baking dish, allowing it to slightly hang over the top of the dish. Set aside. 2. In a mixing bowl, stir together the oats, cinnamon, baking powder, and salt. 3. In another mixing bowl, whisk together the bananas, milk, peanut butter, maple syrup, egg and vanilla extract until well combined. Fold in the dry ingredients until blended. 4. Transfer the mixture to the prepared baking dish. Sprinkle the blueberries on top. Bake for 30 to 35 minutes or until set. Let cool slightly, then lift the parchment paper from the pan and slice into 8 squares. Serve immediately. 5. The oatmeal squares can be prepped in advance and stored in a large sealed plastic bag or airtight container for up to 4 days in the refrigerator. Reheat in the microwave for 30 to 60 seconds, or until heated through.
