Peanut Butter Oat Cookies / Granola Bars

Super healthy, incredibly delicious peanut butter oat nut granola bars! They are so easy to throw together and satisfy that sweet tooth without making you stray from your diet! Packed with nuts, unrefined natural sweetener (agave nectar), and organic peanut butter, these bars (or cookies) are sure to please everyone.

Ingredients

4 cups Instant Oatmeal

1/4 teaspoon Salt

1/2 teaspoon Cinnamon

2/3 cup Skim milk

1/2 cup Honey (or agave nectar)

4 tablespoons Canola Oil

3/4 cup Peanut butter

4-6 tablespoons nuts/seeds


Directions

Preheat oven to 350 degrees F. Blend/process 1 cup of the oats in a blender or food processor until it resembles flour (I use the dry blade of my Vita Mix--works very well). Combine in a bowl with the remaining 3 cups of oats, salt, and cinnamon. Add the milk, agave, canola oil, peanut butter, and nuts. Grease a 9.5 X 13in pan (you can change size depending on how thick you want your bars to be) with some additional canola oil. Press dough into the pan until it lies flat. OPTIONAL: Sprinkle the uncooked bars with some additional flax seed, sunflower seeds, and agave (delicious!). Cook granola bars for about 20 minutes or until edges are slightly browned. NOTE: To make this recipe a cookie recipe, just roll the dough into balls and press them onto a lined cookie sheet. Sprinkle with nuts and agave if desired.
