Pear and Honey Coleslaw

Ingredients

1 pear hard, not ripe

2 cup white and red cabbage shredded

1/2 cup Carrot shredded

1/2 teaspoon mint chopped

1/2 cup pear juice unsweetened

1/4 cup Canola Oil

1 teaspoon Lemon zest

1 tablespoon honey

1/2 teaspoon salt

1/4 teaspoon pepper


Directions

Peel, core and grate or chop pear to equal 1/2 cup Combine with cabbage and carrots. Place mint, pear juice, canola oil, lemon zest, honey and salt and pepper in blender, mix Pour over vegetables and toss. Refrigerate at least 4 hours, stirring occasionally.
