Penne Pasta W/ Tomatoes + Ricotta Cheese

Ingredients

12 ounces Penne pasta

1 cup Ricotta Cheese

20 ounces Plum tomatoes diced

1/4 cup Parmesan cheese

1 clove Garlic

8 leaves Basil chopped

2 tablespoon Olive oil

to taste Salt

to taste Pepper

2 teaspoon Fresh Italian parsley chopped


Directions

1. Place tomatoes, basil, and garlic in bowl with olive oil. 2. Blend cheese (Ricotta) , marjoram, salt, and pepper 3. Boil pasta 4. toss tomato mixture in hot skillet when mixture is hot stir in ricotta cheese 5. add pasta to mixture 6. Serve with grated cheese Serve with fresh Ciabetta Bread. Brush tomatoes, basil, and olive oil if desired.
