Cream together : Sift together: 2 1/4 Cups Sugar 3 Cups flour 3/4 Cup butter 1 1/2 teaspoon Soda 3/4 teaspoon salt Add & Mix well: 3 beaten eggs 1 1/2 cups pulp/persimmon; then add: 1 1/2 teaspoon vanilla & 3/4 cup each of: white raisins and chopped nuts. Soon into muffin cups and bake @ 375 degrees. Bake about 35 minutes @ 375 degrees; makes 40 small cupcakes
