Pickles - fast and easy

Ingredients

1 cup Rice vinegar

1 cup Water

1/3 cup White wine vinegar (6% acidity)

3 tablespoons Granulated sugar

2 teaspoons Kosher salt

2 (+/-) tablespoons Pickling spice (gently toasted)


Directions

Simmer all of the above, then pour over 1 - 1-1/2 pound vegetables. Cool to room temperature and refrigerate overnight. From: COOK'S ILLUSTRATED 7/19/13
