Pineapple Banana Muffins

Ingredients

1 cup All purpose flour

1/4 cup Uncooked quick oats

1/2 teaspoon Baking soda

1/4 teaspoon Cinnamon

1/4 teaspoon Salt

6 tablespoon Butter

3/4 cup Light Brown Sugar firmly packed

2 large Eggs

1 teaspoon Vanilla

2 large Ripe bananas mashed slightly

1/2 cup Crushed pineapple in heavy syrup drained thoroughly

1/2 cup Chopped pecans or walnuts


Directions

Preheat oven to 350 degrees. Line 12-cup muffin pan with cupcake liners; set aside. In medium bowl, combine flour, oats, baking soda, cinnamon, and salt; set aside. In large bowl, with electric mixer, beat butter and sugar until light and fluffy, about 5 minutes. Beat in eggs, one at a time, and vanilla until blended, scraping sides of bowl occasionally. Gradually beat in flour mixture, then bananas and pineapple, just until blended. Stir in the nuts. Spoon evenly into prepared muffin pan. Bake 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes before removing to wire rack to cool completely. Freezes well.

Love this recipe! I use it all the time. I have never put the pineapple in it and it is still my favorite!!

Oh, and thanks Beachbumette for adjusting your recipe to say "pineapple thoroughly drained" to remind us not so good cooks, as per my feedback I left ages ago. I have learnt but still look up Bigoven for this recipe :-)
