Pistachio Nut Tea Bread

Ingredients

2 Eggs

Grated peel (no white

2 c Fresh or reconstituted

3 c Orange juice

1 c Sugar

1 c Whole pistachios

12 c Self-rising flour

1 Butter


Directions

Preheat the oven to 350 degrees F. Grease and flour a 9 x 5 x 3-inch loaf pan. In a large mixing bowl, beat the butter and sugar until well blended. Beat in the eggs, orange juice, and peel until light. Add the flour, alternating with the buttermilk. Fold in the pistachios. Pour into the prepared pan and bake until a skewer inserted into the center comes out clean, about 1 hour. The recipe has errors: 12 cups of flour? Is that supposed to be 1 cup, or 1/2 cup, or 1-1/2 cups? 2 c fresh or reconstituted what? Could it be buttermilk? How much grated peel of what? Orange, since the recipe has orange juice.
