Pre heat oven 180 deg
Pat pork dry and score
Slice capsicum into large chunks, scatter with garlic cloves into base of pan. Add tomato bay leaves, paprika and salt.
Place pork on top pour in cider vinegar and top with water to come 2/3 up meat. Cover sealing with extra tin foil
Cook 3 hrs. Remove foul and cook further 20-30 mins until meat browned.
Crackle skin by grilling under hot grill
To serve pull apart as opposed to slicing. Serve either hot sauce, tomato capsicum and garlic
