150 ml sunflower oil

1 carrot finely chopped

1 onion finely chopped

50 ml port

150 ml red wine

1 garlic bulb halved

5 white peppercorns toasted, cracked

1/2 bunch thyme

1/4 bunch flat-leaf parsley stalks

1 leaf

700 g desiree potatoes

1/4 cup (60ml) thickened cream

Pinch freshly ground nutmeg

1 egg

260 g strong (baker’s) flour

1 tsp extra virgin olive oil plus extra to serve

Shaved parmesan

Flat-leaf parsley leaves
