Potato-Goat Cheese Tart

Ingredients

1 1/4 lbs Yukon Gold potatoes & sweet potaoes thinly sliced, peeled

3 tbs olive oil

1 tsp kosher salt

pepper

1 sheet thawed frozrn puff pastry

1/2 cup goat cheese


Directions

Microwave 1 1/4 pounds each thinly sliced peeled Yukon Gold potatoes and sweet potatoes in a large bowl, covered, until par-cooked, 3-4 minutes. Toss with 3 tbs olive oil, 1 tsp kosher salt and a few grinds of pepper. Roll out 1 sheet thawed frozen puff pastry into an 11" square and prick the center all over with a fork; shingle the potatoes over the top. Bake on a baking sheet at 425 degrees until well browned, 30 - 40 minutes. Dot with 1/2 cup goat cheese and bake 2 minutes.

WOW! Very easy, and pretty fast, and SO good. I used a full log of soft goat cheese. Also only used regular potatoes, so would like to try it with sweet potatoes. Lastly I would have given this 5 stars as is, but then Rob topped it with the Balsamic syrup we have and it was even more amazing!!
