Potato Skin Soup

Ingredients

6 medium potatoes diced

1 small Onion diced

1 carton (32 oz) Chicken broth

2 tablespoon Unsalted butter

1 pkg Onion soup mix

1 quart Water

3 tablespoon Bacon bits or 2 strips bacon chopped and cooked

Odobo seasoning

1 ea Green Pepper chopped fine


Directions

Fry onion in olive oil till translucent. Add chicken broth, butter, onion soup mix, water, bacon bits, Odobo Seasoning and pepper. Bring to a rolling boil, reduce to a simmer and add potatoes. Cook till potatoes are done. Top with a dollop of sour cream and a sprinkling of shredded cheddar cheese.
