Pumpkin Apple Streusel Muffins

1 cup Libby's Solid Pumpkin

1/2 cup

2 cups peeled and finely chopped

1/2 teaspoon

1/4 cup

4 tablespoons


Directions

MUFFINS 1) Preheat oven to 350 degrees Farenheight. 2) Combine flour, sugar, pumpkin pie spice, baking soda, and salt in a large bowl. Set aside. 3) Combine eggs, pumpkin, and oil in a medium bowl. Add liquid ingredients to dry ingredients. Stir until just moistened. 4) Stir in apples. Spoon batter into greased or paper-lined muffin cups, filling 3/4 full. 5) Sprinkle Streusel Topping over batter. 6) Bake 35 to 40 minutes for regular size muffins and 40 to 45 minutes for giant muffins. STREUSEL TOPPING 1) Mix flour, cinnamon, and sugar. Cut in butter until mixture is crumbly.
