Quick Pickled Red Onions

Ingredients

1 large Red onion peeled, sliced VERY thinly into strips

3/4 cup Apple Cider Vinegar

1/4 cup Water

1 teaspoon Sea Salt

1 tablespoon Sugar


Directions

1) Heat the vinegar mixture. In a small saucepan, stir together the vinegar, water, salt and sugar. Cook over medium-high heat until the mixture reaches a simmer. 2) Into a pint mason jar, add the onions. Pour the hot vinegar mixture over the onions, screw on the lid, and shake the onions briefly until they are evenly coated with the vinegar mixture. 3) Let the onions marinate for 30 minutes, making sure that all of the onions are fully submerged in the vinegar mixture.

These were so fun! I was making wedge salad and needed something "fancy" for the top, and these quick pickled red onions did the trick. They taste great, plus they are quick to put together and store well. Will definitely be making these again the next time we are having hamburgers!
