Quinoa lasagna

Ingredients

2 cups chicken broth

1 cup quinoa

1 egg

2 Tbs basil

1 Tbs oregano

3 cups pasta sauce

2 cups spinach

2 zucchini, sliced

2 carrots, thinly sliced

1 egg

1 big bag Italian cheese


Directions

1. Boil quinoa in chicken broth for 20 min. 2. Mix cheese with egg 3. In a pan, layer quinoa, cheese mixture, veggies. Repeat. 4. Bake for 30-45 min at 350 degrees.
