1 pound zucchini or yellow squash

1 large onion

1 large red yellow or orange bell pepper

1 pound meaty tomatoes like Roma or San Marzano

Morton Coarse Kosher Salt

6 tablespoons inexpensive olive oil

2 cloves  garlic

2 teaspoons fresh oregano (1 teaspoon dried)

2 teaspoons fresh thyme (1 teaspoon dried)

1/4 teaspoon red pepper flakes

Freshly ground black pepper

Cooked pasta for four (I like farfalle)

Fresh basil oregano, chives, and/or thyme

Grated Parmigiano-Reggiano cheese
