Raw Mango Salsa

Easy snack that lasts in the fridge for 1 - 2 weeks. Tastes great over salads, meats, rice, or with tortilla chips.

Ingredients

6 Whole Tomatoes Seeded & Diced

1/2 Medium Red Onion Diced

1/2 Medium Sweet White/Yellow Onion Diced

1 Medium Yellow Bell Pepper Diced

1 Medium Mango (or peach) Skinned & Diced

1 Medium Jalapeno Diced

4 Cloves Garlic Minced

1 Can Cooked Black Beans Rinsed & Dried

1/2 Cup Fresh Cilantro Chopped

2 Small Limes Juiced


Directions

Combine all ingredients, adding lime juice last. Mix thoroughly until ingredients are evenly distributed throughout. Can serve immediately, but tastes best when ingredients soak in lime juice for at least 2 - 3 days.
