Refrigerator Rolls

Can make the dough and the beginning of the week and just scoop out what you want to cook that night. Biscuit like!

Ingredients

2 1/2 teaspoons yeast

1 cup butter (2 sticks)

1/2 cup Vegetable Shortening

1/4 cup Sugar

1 large egg

4 cups Self-rising flour (not all purpose flour)

1 teaspoon Kosher Salt


Directions

1. Fill a bowl with 2 cups very warm water and sprinkle the yeast over the surface. Let the yeast sit for 5 minutes, until totally dissolved. 2. Combine the butter and shortening in a separate bowl and melt it in the microwave. 3. Pour it into the bowl of an electric mixer 4. Along with the sugar. Mix using the paddle attachment on medium speed until smooth 5. Crack in the egg and mix it in until combined 6. Then pour in the yeast-water mixture and mix until smooth. 7. With the mixer on low, sprinkle in the flour and the salt 8.Mix everything together until very smooth - it will resemble a batter more than a dough at this point. 9. Scrape down the bowl and make sure it's all combined 10. Then cover the bowl with plastic wrap and pop it in the fridge. Refrigerate it for at least 8 hours or up to 5 days. 11. When you're ready for warm rolls, preheat the oven to 350 degrees . Scoop out batter and drop into greased muffin cups. 12. The rolls need to bake for 20 to 22 minutes until golden.
