Roast Chicken Salad

Ingredients

Dry mustard; pinch

1 tb Lime juice

2 tb Chopped red onion

Salt and pepper

1/4 c Toasted; chopped pecans

1 tb Parsley chopped

1/4 c Celery diced

1/4 c Mayonnaise

2 Leaves bib lettuce

; pieces

1 tb Mango chutney

1 1/3 c Cooked boneless chicken; cut


Directions

Toss the chicken with lime juice, generous amounts of black pepper and a pinch of dry mustard. Let sit for at least 30 minutes in a glass bowl. Tilt the bowl and remove any juices if you wish.
