Roast Squash and Grape Tomatoes

Ingredients

1 cup or more Butternut squash or sweet potato diced

3/4 cup or more Grape tomatoes keep whole

1 sprig Fresh rosemary de-stern and roughly chop leaves


Directions

Place squash and tomatoes in a large bowl. Drizzle about 2 teaspoons cooking oil over bowl. Season with rosemary, salt and pepper. Toss to coat. Spread veggies out in a single layer on a foil-lined baking sheet. Bake 30 minutes or until squash is fork tender.
