4 lbs. (or about) butternut squash peeled, seeded and cut into 1-inch dice. Save a couple of nice looking fronds in a glass of water

4 large Granny Smith apples peeled, cored and cut into quarters

2 large fennel bulbs cut into 1/2 inch pieces

2 packages - .10 ounces dried cranberries

1 lb. Wright Brand Naturally Smoked Maple Flavored Bacon

1/3 upextra virgin olive oil

1/2 cup pure organic maple syrup

1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme

Salt to taste 4 teaspoons,
