Ingredients

12 Carrots

3 tablespoon olive oil

1 1/4 teaspoons Kosher salt

1/2 teaspoon Black Pepper ground

2 tablespoon fresh parsley Minced


Directions

Preheat oven to 400 degrees F. If the carrots are thick, cut them in half lengthwise, if not , leave whole. Slice the carrots diagonally in 1 1/2 inch thick slices. (The carrots will shrink while cooking so make the slices big.) Toss them in a bowl with the olive oil, salt and pepper. Transfer to a sheet pan in 1 layer and roast in the oven for 20 minutes, until browned and tender. Toss the carrots with miced parsley, season to taste, and serve.

Third time! Easy side. Next I might add turnips. Maybe a teeny drizzle of balsamic vinegar.

how about turnip,cooked to fork tender, add a small amount of butter, lots of freshly ground pepper,and mashed until all lumps are gone. i prefer this to potatoes. as for the carrots , iwould add a small amount of honey right before servering

My wife and I both liked these carrots. Much more tender and sweet than the usual boiled carrots.
